You could stain and glue a piece of wood to the wall with a bead of clear silicone caulk on the counter top. 4x4 or 6x6 tiles can be attached to the wall with Power Grab and then fill the seams, top, and bottom with tile grout that comes in a caulking tube. Look for salvaged or left over tiles at salvage stores or Habitat for Humanity Re-Store.
I like the panels that look like old tin ceilings. Fasade makes panels that I've used for a backsplash. They were easy to install.
