When I think rustic I am thinking a more worn look. Often times this means making the wood look more gray. Are you wanting to keep the oak color or change the wood look at all? If so you would have to do this first before doing the step below.
You could dry brush it with white paint which requires you to dip just the ends of the brush in a 1/2 and 1/2 white paint to water ratio. Blot it on newspaper then lightly brush it back and forth over the wood. Repeat until your happy with the look. If you get to heavy of a coverage then sand it lightly. I would also sand the edges of the piece of furniture this also contributes to the rustic look.

You can use a grey tone stain.
Check into Gel stains. They are a lifesaver and you do not have to sand or prime beforehand!
