Make sure they are solid wood and not hollow. And then you can definitely cut them down to build a dog house!

You absolutely can. It will make it an easy project for you.
Closet doors are interior doors only. Sealing them with paint to withstand weather probably won't last as exposure to weather and temperature changes causes warping and would likely break a paint seal. Don't be fooled by solid core flat doors--only the edges are wood and the core is particle board which is a sponge. If you want to do the job once get some plywood and 2x4s
