You could fill with a wood putty that is stained to match. This is a common issue with true shiplap. We ended up covering ours in an 1880's build.

Add a trim to the gaps or use wood filler which ever sounds appropriate to you.

There are many attractive trims out there in the DIY stores, which would be more labor intensive than a matching wood filler, but would probably look better with regular panelled sheets.
It sounds like they're not attached to the studs. Nail in each piece, hitting the studs.
