32" height is recommended for 8' walls.
Hello Jim! This picture has the board and batten higher than 3 feet--I believe it looks higher. I like the way they have added a picture rail to display items. The picture also shows a lot of doorways like your hallway seems to have. One thing you could do is to paint/prime your walls to 3 feet and then higher to see what you like. You are going to have to give your walls a coat of primer or paint before you install the batten anyways. I would also prime and paint the batten before I installed it leaving a final coat for once it's up on the walls.
Another suggestion is to use Washi tape to give you an idea of what batten may look like, cheaper and easier than painting. That way you could easily adjust the height of the batten to what looks right for you. Or go with the 32-36"

I think it's a personal preference. Google some images and see what appeals to you.
Never go only half way - 4 ft. I personally like to go tall in narrow areas. Also paint ceiling the same as wall. Do the board and batten a soft white. I'd vote for 5 ft tall. It will make the hall look wider.

I like higher with a ledge at the top for pictures. White will make the space feel larger and definitely a do a bright white ceiling.
