Here's 42 kitchens with vaulted ceilings. My daughter has vaulted ceilings in her open concept kitchen living dining room. The cabinets are hung just like they would be in a kitchen without vaulted ceilings. Straight run of cabinets at the proper height.

Hang them the same way you would with a flat ceiling. There are standard sized cabinets and distances between counter and upper cabinets. You could always use 30" cabinets and then add 36" cabinets as the ceiling goes up, but all bottoms would be aligned.
Doesn't matter if there is a vaulted ceiling or not. Here are are sites on how to determine proper size cabinets for your space and how to hang them correctly.

A vaulted ceiling makes no difference, hang them as you would for a flat ceiling, thinking about it, I cannot imagine any other way to hang cabinets.

You’d hang them no different than a flat ceiling. Ideally the bottom will be 18” above the counter.
If you’re asking about the actual process of hanging cabinets it’s quite easy to do. There are a couple of methods I’ve used. The first is to take a straight board and screw it into the studs so that the top of the board is at the height of the bottom of the countertop (usually 18”). Make sure the board is level! This gives you a nice support to rest the cabinets on while you screw it to the wall. When you’re finished remove the board and fill the screw holes with spackling.
The other method I’ve used is to make a ‘deadman’. This is simply a rectangle made out of 2x4 lumber. You just sit it on the countertop and rest the cabinet on top while you screw them into the wall. The upside of this is that there aren’t any screw holes to fill. The downside is it can get a little ‘tippy’. This is the method I prefer and use.
