Use marine varnish. It's used on boats!
Marine varnish is really good at holding up against weather, especially on boats. Spar makes a good one:

Marine Varnish is great!
Exterior Spar Urethane is designed for outdoor and should produce the sheen you want. Make sure to lightly scuff with fine steel wool between coats so they will adhere to each other.
rustoleum outdoor gloss polyurethane.
Thanks everyone! I had never heard of Marine varnish so I checked it out and I think it is perfect. I ordered it from Totalboat and I will send pictures if I don’t screw it up hahaha
