Google is what I use. However, I do visit all the local stores and purchase sample pieces, take home and lay out in the area to be tiled. Be sure to note on the back what store each tile was purchased from so it is not a wild goose chase trying to remember where each one was acquired. I am in LA County and literally have hundreds of stores to choose from. I never purchase on line as it is impossible to determine quality and craftsmanship from a computer screen.
Because it is an un-gauged tile and is extremely irregular, I would recommend a pattern that is not formal.

The other challenge with true Saltillo tile is that the grout joints are huge to deal with the tiles’ irregularities and grout is always a source of maintenance issues. So go with smaller grout joints.
The true Saltillo is porous and that’s why it gets sealed and or waxed. Wax build-up is also something to avoid.
