I have shelves under my stairs to the attic. They are simple wire shelves that are attached to the wall. Each support is screwed into a stud or we used anchors for the drywall if the support did not line up with a stud.

Best I have seen are shelving units built to fit under each stair with a handle on them to pull them straight out and you can't see the "junk" on them. Attach strips of wood on the floor so each shelving unit comes out perfectly straight. Use casters on the bottom so you can pull them out as you need them. When they are not in use all you see is the side of the wooden shelf and a handle.

I bought plastic shelving from the hardware store and lined them up under the stairs. I then used matching decorative shower curtains to hang in front of the shelves.
