Hollow core doors work great,I have made a lot for my wife and granddaughter cover with oil cloth and staple on the backside.Use blocks or cubes on each end, cubes work well for added storage.

If you can get some old kitchen base cabinets cheap or free, you can use them for your workbench base. I did that, and there is a space between them where I put scrap wood.

Get two used standard 2 drawer filing cabinets (both same size) for storage on each end and buy an inexpensive piece of laminated kitchen counter (has backsplash attached) at Home Depot or Lowes. Lots of colors and lengths to choose from. It's just the right depth and height for a work table/desk with a nice rounded finished edge in front and will create a sitting area between the file cabinets where you can tuck a chair into and give you leg room. The counters sit just perfect on top so you can still open the top drawer of the file cabinets. If you need a smaller length, they will usually cut them for you free. Gives a nice clean finished look and is cheap, fast and easy. Love your idea to turn a trailer into a hobby room!

Go to Habitat for Humanity, you will find all kinds of cabinets and counter tops, hollow core and solid core doors...all super cheap! Usually all are in very good condition as well.

If you have a Freecycle group or ReStore in your area, you might find them there.
