Easiest way to remove a clawfoot tub from a 2nd floor bathroom?

Question

I need to remove the tub (from an old house) as well as redo the bathroom. I'm also trying to remove old ceilings and walls (looks like some kind of pressed cardboard material). Can anyone suggest a good material (for the ceiling) that is easy to install and low cost?

The ceiling just use sheetrock. But if keeping this as a bathroom the walls can be sheetrock. Anything around the shower tub etc has to be DURROCK to act as a barrier for moisture. Paint can be any kind but I would Add a mold deterrent to the paint As an extra measure.
