Use rustoleum countertop covering. Find at hardware store-Home Depot or Lowes. Covers laminate. Not sure about any other finish but it will probably cover fiberglass as well. -

How big is your countertop now? Replacing a countertop is not that big a deal. Do you have any stoneyards in your area? I bet you can find a remnant piece of pretty marble that would be pennies on the dollar - you just need to be a bit patient to find the right piece for the right amount.What is your countertop now? They sell all sorts of DIY kits at home improvement centers. -
