Use brackets underneath to attach them to each other and then maybe paint or re-stain according to what look you are wanting to achieve?
I'd take the tables and antique them with paint. You'd be surprised at what a change a little paint can make.
Any chance of a picture of them laid out together? Would give more inspiration!
You can place a piece of plywood on the top, after deciding how big of a coffee table you want. this will depend on how close, or far apart, you place the end tables. Get your measurement, The local lumber/ big box stores will cut the plywood to size, then you just need to sand it, and round the sides and corners( for safety and appeal). I would then paint the end tables, to brighten them up, and paint( or stain) the plywood top to accent .
You could remove the legs if they are too high, but unless they are really high, and you can't see over them, just leave them. BTW, many people use a grouping of small, separate tables as a coffee table. You don't have to put a top on them.

I'm all for eclectic personally...it definetly goes with rustic...think cottage leftovers. Painting unifies everything IMO.
