To support the weight of a hot tub, you’re going to have to get an architect or engineer to calculate the weight and necessary structure.
10 lbs per gallon of water x 800 gallons + the hot tub itself + the weight of 4 people= >2 tons.
If it’s sitting on a concrete slab, then build the deck around it, with the 2x4 or 2x6 decking on top being cut in the curves needed to accommodate the tub. The finished deck height of the deck should allow you to lift up the cover and not have to go digging for it.
The sides of the deck can be screened with plastic trellis or completely covered, as long as you can get to the tub’s access hatch.
Use pressure treated wood and coated deck screws. When building the supporting “walls”, think about which way the water drains when it rains and align the sole plates with the drainage. You’ll need to set the sole plate with TapCons and I’m not sure they make exterior-rated ones and you’ll have to check.
I would build my walls to accommodate 2x8 floor joists at 12” on center with blocking between the joists if they’re more than 4’ spans because this lumber will be getting wet it’s whole life. I’d space the decking to have 1/4” gaps.
Thr decking will need to be sanded (outside) and coated to avoid splinters on bare feet.
