You can Build a 2-1/2" 20 gage structural metal stud wall on each side , with 1/2" drywall each side & install a French sliding door in the center. This will save space in the room. The prehung door will have to be purchasesd with a smaller fram to fit the opening.
Hi Jamie, you can purchase or build a closet organizer like the ones I'm attaching a photo of. If you want a full on built in closet, it is as simple as buying 2x4s, building the walls and then sheet rocking.
You need 2'4 1/2" depth for a standard drywall closet or you can do 24" deep pantry style cabinets for closets. Add a rod, works great.
