If wood, Murphy's Oil Soap. Vinegar and water will work on non wood cabinets.
Yep, I second that. Just cleaned some opening kitchen shelving yesterday and Murphy's is what I used but with a little bleach in it too!
If the grease is really baked on and isn't coming off with the milder methods, there is a Castrol product named Superclean. I've gotten it at the local Ace hardware and K-Mart. It's VERY caustic, so use only as a last resort. If you have to use it, dampen your rag and spray Superclean directly on the rag, clean the area with light wiping motions. Once the grease is gone, clean the area with a clean, wet rag to remove any leftover cleaner.
