Tung oil! It’s food safe and gives a beautiful warm color and finish. Three coats and ours has held up for years. :)
First, clean the surface & sand if necessary.
Then, Use 2 coats of conditioner. This product is best b/c it is food safe and contains mineral oil, beeswax, and carnauba oil: https://amzn.to/2I9oEKs
Apply to small areas at a time and let it soak in for 1 hour before the next coat. After the second coat, let it sit for 1 hour and wipe off excess.

If you plan to cut/lay food on it then mineral oil is food safe. If you don't plan food contact the water based polyurethane would work. Apply mineral oil with a cloth with the grain. Use a foam brush with polyurethane also with the grain and sand in between coats
