How do I finish knotty pine plank walls?

We moved into a home that has knotty pine tongue and groove walls and ceiling in the family room and hallway. It is rough and needs to be sanded. What is the process of finishing it? Obviously sanding and what kind of sealer / varnish ? I don't think I need to stain it - I like the natural color.

Three coats of a water based polyurethane. Fast drying and does not yellow. Oil based polyurethane and varnish have a yellow ting and do yellow over time. Your choice.

Hello Cindy,
Look over this product. I have found it quite easy to work with.
Minwax® PolyShades® enhances wood grain by combining beautiful rich stain color and long-lasting polyurethane protection in one easy step. It can also be used over polyurethane finishes, so you can change the color of your finished wood, without removing the existing finish.

You can lightly sand and then vacuum off the dust. You can cover it with a clear Varathane, at least two coats. This will help to smooth out the rough surface and make it easier for you to clean when necessary. Do not shake your Varathane before using, just stir it regularly.
Make sure you decide how shiny you want the finish to be before you proceed. Those top coats are a pain to remove.
