I need to redo my patio ceiling. I would like a Shiplap effect but cannot figure out what material to use that would be good for outside humidity in Florida. Any suggestions?

    Use vinyl bead board.

You can use wood, but make sure you seal it. Think about it this way, lots of houses in the south (I live in south Louisiana, so I understand humidity) use wood... you just have to allow for expansion in humid months. Personally, I would do the bead board. Just install so it can expand under the trim, much like you would do a floor.

Go to your vinyl siding store, and look at vinyl for the ceiling. It comes in bead and batten that looks like the old beaded pine boards we used to install. It is 12 inches wide, and 12 ft long. There is J molding, or a variety of trims available, including crown mold, both vinyl that is paintable, and in solid colors. Vinyl has come a long ways. There are colors, like in the Heritage colections, that have no gloss to them. Buy the more expensive panels, because they are thicker. IT IS MAINTENANCE FREE when you are done. If you don't know how to install it, ask them and they will have a video somewhere, that will show you step by step how to install it. Or they can provide a number to some good installers that have bought a lot of siding through them.
