My blackberries are not sweet, any idea how to help them?

i have 3 thornless blackberry bushes last year they were very sweet this year they have more of a tart taste any ideas how to help for next year

    Blackberries should be picked when the fruit is plump and very black.If you pick them off to soon they will be sour and do not ripen off the vine.

    I am not a specialist but I have noticed that my blackberies and rasberries, as well as my redcurrants taste differently from one year to another depending on the weather (if the summer was mostly sunny and warm or mostly rainy and cool). I haven't done anything to help them except for trimming them in the spring and a little spading around them (also in the sping). I have read in a book that it is recommended to put some compost in the ground near their roots in the autumn but I haven't tried it so far. This year all my fruit taste delicious but it doesn't happen every year.

    Pick when ripe and then use honey for a sweetener!
