I have painted a lot of paneling over the years. You can fill in the "cracks" with spackling and paint over it, or just paint without filling the cracks. You'll love the difference. You'll want to use primer first so the paint will adhere. It's very easy to do. Good luck with whatever route you decide to take.

You could take the paneling down. It's fairly easy if it is just nailed rather than glued. If it's older I would suspect it is nailed. It should pull right off. Carefully take off the trim so you can reuse it-then pull off the paneling. Yo can fill the nail h oles, sand them smooth and paint.

There are several things you can do. You could paint, wallpaper, put up contact paper, remove and put up beadboard or leave plain.
for an inexpensive fix I would put pretty contact paper over the paneling
