Mint can be so annoying! When you pull them, do you use a tool (like a knife) to really get it all out? Unfortunately, pulling is often the only way UNLESS you would consider chemicals. Will you?
Have you tries smothering them out with newspapers and mulch?
I would plan a Kentucky Derby party and serve Mint Juleps until you are completely out of mint!!! Start stocking up on bourbon now because the derby is the beginning of May. The downside is it... is a bit expensive, but the upside is... you won't really care!!! :-)
1) pull it when the ground is damp, and follow the long running 'root' as far as you can, getting up as much as possible.
2) wait two or three weeks...and do it again.
repeat until it gives up (this can take several years, it's stubborn)
the only other option is to abandon the bed, add a competing species, and let them battle it out.
