Depends on what you are painting, but you almost always need 2 coats for anything.

Usually you get a much better finish with 2 coats. But many paints out there also have a primer built in, so not always needed if you are covering similar color
Many paints nowadays say 'cover in one coat,' but I am a two coat person. As others have asked - it depends on what you are painting. Walls and woodwork, definitely two coats.
