What's the best way to prepare wood paneling before painting?
It's a large room with three walls of nice varnished wood which we want to keep and paint light where we can still see the wood details.
I am not sure what Pollyfilla is, to be honest. What I would use is a quality wood filler that is paintable and stainable. This can be found in the paint section at your local hardware store or Lowes, Home Depot, etc. Ask the store associate in that department for their reccomendations. Good luck!

A truly versatile wood filler is WOOD! If holes are round, even toothpicks would be suitable. Or dowel. Sawdust is a very handy ingredient... see below.
You NEED to maintain a surface that can be Finished to match the surrounding wood....
1. Get ingredients.. a. wood glue (white or fast-set carpenter's glue) b. sawdust of same or very similar Unfinished wood c. wood chips (long splinters of similar UNfinished wood, toothpicks, dowel)
2. Mix sawdust & glue- make a thick paste and Pres into hole.
3. Add wood chips / dowel to fill hole.. Press firmly into hole .. DO NOT try to make flush surface yet.
4. Wait for glue to dry.. chisel off any protruding chips, sand smooth
5. The result is Wood held in place with water-soluble glue... will take most any stain & finish!

I agree, the wood filler is best. Just sand it even with the wood when dry.
