Hi Marcia, as far as I know you can use any type of acrylic paint on plaster walls.

Latex paint is the best for what you need. Generally a semi-gloss in kitchens and baths and matte for living and bedrooms.
I feel the primer is more important than the paint. Using oil based primer should provide good results. Then, use the paint of your choice.
Any wall paint will work. Just make sure they are clean and dry. Use a stain blocking primer then paint.
Our house has all plaster walls. We have used both oil and latex paint on them. We do not prime, but the walls are so old I guess it wouldn't be necessary. House 113 years old, we have lived here 46 years.
