I have used vinyl floor tiles in those areas of my 35 year old cabinets--the vinyl tiles that have adhesive and you peel off the backing before you install. They are easy to cut and fit and they provide a good washable surface. They repel water too. They also hold up way better than drawer/shelf lining and Contac paper--no bubbles or wrinkles and they look nice. You can buy them to coordinate with your cabinet colors. In some stores you can buy the tiles individually or you might have to buy a whole box. Usually less than 25.00 for the entire box. I even installed them in my new cabinets--especially under the sink.
I agree with Gk. Get some peel and stick vinyl tiles and cut them to fit. They are inexpensive and will wear well.
I have used leftover sheet vinyl flooring
You have some sage advice here. These tiles can sometimes be found at the Dollar Tree! They are in a four pack. If you don't mind a bit of whimsy, find a flooring store that might have some scraps. You could do a "patchwork" and they will last for a long time. Hope that helps!! This might help, too.
