I am considering using laminate floor tiles for a backsplash in kitche

how many coats of polyurethane do I need to put on it so that it can be cleaned?

Two coats would be best. -

I would do about 4, as Kathy said, the more you put on, the more durable the topcoat will be. Use coats that aren't too thick, so that you don't get runs. Make sure to close up the parts where the boards come together so that you won't get any liquid between the boards when you clean the back splash. -

You might consider LVP flooring. Also known as luxury vinyl planks. Different types exist. I would suggest the floating type, no backing or underlayment required. No top coat needed, its rubber. Comes in the same color assortment as laminate floor. Goes on the same. No nails or glue. Probably wouldnt use near heat. Being a designer I wouldn't recommend as the longevity isn't what most people expect. There are stick on wall tiles if you check with the big box stores they should be able to help out
