Instead of removing all my tile in the shower I would like to cut out 2 rows and input a border of tiles.

Use a scalpel, or similar thin, sturdy edged tool to score the grout you want to remove. Tap gently with a thin chisel and hammer, until the grout start to crack, then wedge a thin scraper under the tile and tap lightly with the hammer until the tile comes loose.

Wear googles, to avoid being struck by lose mortar or cracking tiles. Chisel off all old mastic before proceeding.

Have you tried this before or some you know? About how long do you think it would take.
