I think you could put luxury vinyl planks over it.
A floating plank floor should work.
Dal Tile has a snap together tile as well that could work. What type of baseboards do you have? You will also need to reset the toilet with a ring that accounts for higher floors.
You can paint them, tile over, or put vinyl flooring. If you do vinyl, put luan down first or be prepared to see the pattern show throw over time.

Penny tiles are so in again. Get some Mapei Grout REfresh and paint the grout a different color. It does not take long and it has a sealer in it so no heavy cleaning involved.
Floating wood flooring will work fine.
You can tile over them as long as they aren’t cracked or broken
You could go over them but you need to prep the floor just make shure you put enough tile glue for the new tile to stick

If the tiles are uneven, anything you put over it is going to have issues and fail. You’re destined for a lot of headaches if you glue anything onto them. Really the best solution is to take them out and start over, unfortunately.
