Hello Christina, I would hesitate or carefully research your pallet wood source to make sure it has not been chemically treated as some pallets are sprayed and treated and contaminated with harmful microorganisms =that are not safe (toxic) for alternate use for a vegetable gardening.

Since you're growing food,make sure the pallet isn't treated with with arsenic. It's used as a preservative. You might look for the letters CCA,as a clue that it has been treated.
If these sweet potatoes are for eating, I would make sure that they aren't treated, or how were they treated. Some pallets will leach arsenic into the soil. If you do use them, make sure that you put a barrier between the wood and the soil, make sure you put drainage holes in the barrier (I would use the plastic weed barrier, then some gravel, then your soil). Are you going to take apart the pallets to make the raised bed, or do you want to use them whole? You would get different suggestions for each, also how high do you want your raised bed? Thanks!
