When repurposing old wood examples, chair door do I sand?

Depends on their condition and what you want to do to them or with them.
Depends...but I would say always yes at least a little to dull the shine break up the surface to help the paint stick. If you want the old wood or paint look though leave it. You could put a light clear coat on it to protect it but don't use a gloss unless you want it to shine then lay it on thick.

If you're going to apply a finish or paint, it's usually a good idea to sand it a bit.
