Your ceilings should have dry wall underneath. By doing most of the work yourself, you can save money but it will be messy. this link can help

You can take it off but it's really messy. A pro can do it and not make the mess. You can ask around and find somebody doing it when they are off work. But try to get a reference or ask around your friends may know somebody
I painted bead board white and nailed it to the ceiling. Looks beautiful.
To repair, try mixing a 10% solution of bleach and water, put down plastic sheets to protect floor and any furniture and lightly spray. Repeat if needed. You can buy ceiling texture in a spray can, and if its a knock down (flattened bumps) use a large scraper to lightly flatten after its set up about 15 mins. Practice on a board first.
