You need to consider the thickness of sheet wood may be bouncey unless you double the thickness. Also using treated wood help otherwise it would need to be sealed real good.
No, you can not use a sheet of wood as it will rot, needs space between boards to let out water if water pools it will rot the wood so in this case a sheet of wood would not be a good idea
And of there are not proper support underneath it will be "bouncy" - not the best surface for a deck.
And if a hurricane force wind comes through , your deck becomes a massive sail.
