I'm always thinking about the gas mileage, so pvc and laminate everything. It's lighter weight than wood. For cabinets, since I like different, I'd go with garage metal cabinets. Durable and again lighter, Laminate floors are now so gorgeous, who can say no to those? I also like the pvc panels for the walls, but I splurge on appliances, fixtures and the bedding. Happy Rv'ing!
