I pinch and use fresh and dry extra as the plant produces, the more you pinch and use, the more it grows.
I cut mine whenever there are plenty to fill up the dehydrator or freezer cubes. They come back in full growth several times a summer and we have a short summer. I sell the extra I get!(people like fresh, organic, little cheaper than store bought)
I do it throughout the season, but now's good, especially before a frost.
Good idea to do this before first frost.
