Remove the old covers and take them apart at the seems. Once you have removed all the old stitching use the old pieces as pattern pieces. Be careful to keep your pieces to each section together so when reassembling you know where each new piece belongs.

Go and buy a book at JoAnn's. If you are just starting out you will need specialty tools and some explaination on how and when to use them. Once you are comfortable with your new knowledge then you can turn to You Tube for tricks and inspiration. Upholstering well isn't something that just happens, it can involve sewing as well as the physical task of placing material and stapeling it into place. You need to understand how foundations and padding work. That is why those who can do it charge so much. One tidbit I can pass on to you -- start small and cover your first piece with a patterned fabric. Solid fabric will show all of your mistakes.
