I blanch, spread out onto cookie sheets, pop into freezer until frozen then store in ziplock bags.
I blanch all of my vegetables before I vacuum seal them and freeze them.

Yes you must destroy the enzymes by blanching for a couple of minutes.
you dont have to blanch lima beans prior to freezing.
One more little note, please. After blanching for the time needed for your lima beans, or whatever produce you have at the time, you will then remove from the boiling water and immediately plunge the basket and vegetables into a sink of cold water and ice. Allow to chill all the way before freezing. Chilling stops the cooking process, helps maintain the nutrients and the natural color.
