If it's a pretty floral or looks feminine, make some 18" doll clothes and give away to girls with those dolls. They LOVE them. If you're a patient person, teach those girls how to sew. They can use their dolls as models.
There are dozens of charities that would love to have your fabrics for their worthwhile projects like Quilts for Kids, BlanketLovez, Quilts Beyond Borders, etc. Go on-line and search "Searching for Charity" for the many lists of these non-profits that can use your donation.
Try your hand at braiding fabric strips and making a rug.
Make pillows, table runners, coasters or if you have enough, a throw!
I've been using mine for rag wreaths.
I would find a square or rectangle size that all your spare fabrics could be cut into (basically a "standard" dimension) that would all go together easily 2x2,4x4 etc... and start stitching them together into a blanket.... back it with a twin flannel sheet and donate it to a Veteran's charity or to a homeless shelter in your area... or any place you are especially fond of. The scraps get used, and the recipient will get a warm blanket
I'd make crazy quilts - lap size - for senior citizens or children.
