I would check with a store that specializes in cabinet and countertops. Let them know what kind of artificial stone you have, I'm sure they can offer some suggestions.
Poly or varnish is not the way to go. You need a product that penetrates into the surface, not one that sits on top. Get a sealing and curing compound specifically made for manmade countertops that soaks in but doesn't change the colour or gloss level. It's best to ask a specialist as Chubby 58 suggested, but you can also Google it to find some products to get an idea of what's out there.
I agree with Chubby58 and Birdz of a Feather. Artificial stone countertops do not need to be sealed. They are not porous so they will not absorb any sealant. Poly and varnish will not work. Are you sure it's artificial stone? It could be the cleaner that you are using is removing the colorant. Or it could be just a bad slab. Definitely get in touch with a countertop supplier for advise.
