put it in the freezer in a airtight container or bag until ready to use , or no longer than 2 or 3 days days depending on fridge traffic, safest bet is to freeze carcass until ready to use
I was always told take the meat off the carcass after yr done eating. Do not leave on.

3-4 days. When reheated ensure you bring to boil for at least 1 minute to kill off bacteria.
A General is meat (and carcass) should be used or frozen by the third day.

I would boil it with some water, veggies, bay leaf, poultry spices within 3-4 days of roasting it. You can freeze the stock youve made after straining it of course.
I’ve always taken my turkey carcass after we’ve fried it in peanut oil and ate most the meat off the carcass and then take the carcass and boil it off in water to get all the meat and flavor off the carcass before getting rid of it. Then just keep what I boiled off in the refrigerator or freeze it if I’m not going to make soup out of it right away! If you own a seal a meal, you can break down your carcass and seal it in a bag that will also last longer in the frig or freezer without freezer burns!
If it's not been used by now, I personally would throw it out!
