It depends if the plants will get full sun or part shade. Figure out the lighting of the sun, and then go to the nursery and ask for plants matching the sun requirements. Choose the prettiest ones they can show you. I would, personally, get perennials so I don't have to keep replanting every season, but it is up to you.
My mom would put fabric on it, back when, she would use velvet, burlap type material in a fun color or cork. She then would attach coins, shells, fancy belt buckles, all assorted things she had around that she was collecting. Another thing you could use, cut down a plastic food container and make a fake vase, paint it, and put artificial flowers or greens, or a combination with greens like an ivy that would hang down a little below the flowers. By cutting down the container, it would be like putting just a portion of the vase sticking out so it isn't so far out. You can paint it in a color of your choosing. My mom would affix things to her shadow boxes with Elmer's glue so that she could change things out if she wanted by soaking off the pieces with water.
Glue a fabric to a cardboard and attach to the back of your shadow box, hang them and put in items specific to your area...like sea shells if you are coastal, mountain themes like rocks and wishing stones. You could also go seasonal/holiday.
