Take a look on the Home Depot or Lowes website: search for eco borders or rubber borders. They are made from recycled rubber.
If you can find some used shutters at Habitat for Humanity Restore or a thrift shop in your area, they might make a pretty border. You could even take them with you if you move for another project.
Home improvement stores should have an array of borders right now. There are attractive plastic/rubber type that are light and easy to use. Then can pull them up ready to move..
The planks can work if you like them or want to paint them. Or you can use a more decorative border. But you are right in trying to contain the soil. Rock are a good choice, too. If you are allowed to have a flower garden, take advantage of it and grow what makes you happy. ☺️
