They need to be planted in ground or in pots where they receive enough sun. If in pots, stick your finger in about 2" down. If dry, give them a drink. If damp, leave alone and check in a few days.
You might not be pinching the tops off often enough......Little water....Lots of sun....don't crowd....No one has a green thumb.....Some people just look at their plants daily......stick your finger into the soil....it should dry out and not get boggy. Feed with Epsom salt a couple times a month.

Herbs need a lot of sun. At least 8 hours, full sun. You can grow either in pots or in the ground. Don't over fertilize or over water. In general, herbs like to drink but don't like their feet wet. If you are planting from seed, remember that certain herbs like heat (basil) and others (rosemary, sage, thyme) can take the cold. Read the labels on your specific varieties and follow the directions. Also remember that herbs are cultivators of what was originally a weed. If you 'tend' them too much, they don't like it.
