It was installed 25 years ago over a cracked plaster ceiling. I want to put up a simple white bead board ceiling

Push up and remove ceiling tiles. Then unscrew or deconstruct the metalwork..........

how it comes down depends on how it is put up there.... some drop ceilings have a metal grid framework that is held up by wires.... clip the wires...get out of the way... and use a rake or "hook" tool to pull on the framework... I have seen some of the DIY guys on TV.. remove one or more sections of the ceiling tiles.... stand in the opening and pull the ceiling down around them.... wear eye protection, long sleeves, and a hard hat, and work boots....wear a mask if there is insulation above the dropped ceiling... there often is... and be prepared for mouse or other droppings... hard hat, eye protection and a MASK..... by the way... have the ceiling tiles checked for asbestos.... it was often used back then.
