Hang some wind chimes in the trees to scare them away. Keep any fallen apples picked up. Perhaps pile those apples in an area where the deer can feed on them--away from your trees.
I've heard that some people have success with powdered coyote urine, but we don't have deer issues so I haven't tried it myself.
