Hi, Personally I would re stick it back in place, because if the new update is not totally watertight you will have given yourself a real headache!
We had same problem but when we removed it the wall had damage. Went to a cabinet shop and got sheets of Formica. Installed using Liquid Nails. Sooo easy to take care of. 36 years later and it still looks good. Of course, you still need to caulk seams every few years.

You could take it down slowly while heating the glue with a hair dryer, then replace with tile, or like Johnavallance82 said, put it back in place. Get a good glue and get it in behind all the places you can reach that are loose, then you can seal all the edges with a clear silicone caulk.
I agree with Rose. I would take it out. Bleach down everything. Let it dry out good and reinstall. From the looks of it, it's in great shape. Just make sure to use a caulking for showers. We just redid our surround in our house that way. Worked perfect.
