Hi Grace! Sounds pretty cool. How about construction adhesive?
Best way is to use contact adhesive. Coat the countertop and the copper sheet. Wait till the contact cement is tacky to the touch. Use strips of cardboard, strips of wood, dowels and lay them on the countertop as spacers. Lay the copper sheet on top glue side down. Starting from the center remove one or two strips and smooth the copper down with your hand. Continue towards the ends. Once they both make contact they bond and and cannot be moved.
