HI Wendy, I see you are in Asheville and am guessing you might have mountains and a lot of shade? and snow? If you are looking for vegetables, look for your region by the map on back of packets... the bigger problem would be keeping the animals away from munching on your plants. Plants would be particular to your landscape, is it sun or shade most? Rocky or good soil...
I love the mountains and know mountain laurel does well most places as well as lots of ferns.
