If it is sheet rock, cut out the place where there was a leak and replace the sheet rock. Use Homemax texture on the ceiling, prime and paint. If it is just a water leak, spray the area with Polyurethane, Let dry, prime and paint.
If you just have a water stain on your ceiling you can touch it up with some Kilz primer. You may have to paint depending on the size of the stain. If you have a sagging ceiling from water damage you will have to patch in some sheet rock, tape and sand it and then paint the ceiling. You may have to paint the entire ceiling since it would be hard to match the color unless your ceiling had just been repainted. Anything beyond doing small repairs might require that you replace at least part of the ceiling if not all of the ceiling. If you have popcorn on your ceiling that makes it a little bit more complicated. You would have to scrap off the popcorn or try to make a repair that matches the texture of your popcorn.
