Can I raise the height of my countertops without dismantling them??
I have 34.5 inch high laminate countertops that are probably original to my house built in 1951. I will be replacing my sink so it will be removed before I attempt anything. I was thinking I could cover the countertops with 3/4 inch plywood and do stained shiplap on top of that. My backsplash is same laminate as counters and I would like to shiplap that same as counters. Has anyone ever tried this?

I’m not sure how happy you’ll be with shiplap countertops. Those grooves will make it really tough to keep the surface clean - spills will be hard to clean up. Maybe if you filled the grooves with resin? Shiplap backsplash would be easy and look cool though! :)
Don't use plywood on a countertop. It's notorious for absorbing liquids and separating. Have you considered removing the laminate and having a "plinth" installed from hardwood, then installing laminate atop?
Sounds interesting. The problems I see is plywood is generally used as a substrate. Plywood has tight and wide grains and stain looks blotchy. You can't really make wood waterproof. Using a marine spar urethane will make it moisture resistant but not food safe. Any other sealer will protect it but not from water, moisture and not food safe. You can raise the laminate countertop by putting plywood under it and paint it using Rustoleum, Daich, or Giani countertop paint kits.
You could put the 3/4 inch plywood on if you plan on putting something like this on.
